Chef Brian Chan’s career started over a decade ago at Beringer Wine Estates in St. Helena, California. While preparing multi-course wine dinners, he gained a deep appreciation for fresh produce and the finesse needed to help their natural beauty shine. From there, Brian moved to the East Coast to work in the venerated “Dining Room” at The Ritz-Carlton, Boston – adding instrumental classical French cooking techniques and Mediterranean flavors to his repertoire.

In 2006, Chef Chan joined the opening team of “L’Atelier de Joel Robuchon” at Four Seasons Hotel, New York. The next step in his culinary assent found Chef Chan in the position of sous chef at the legendary Peacock Alley at the prestigious Waldorf Astoria New York. His work at the “Grande Dame” of New York hotels landed him the opening Chef de Cuisine position when Waldorf Astoria opened their first Asian property in Shanghai in 2010.

After a year in Shenzhen, Brian has returned to Shanghai to man the stoves at SHOOK! at The Swatch Art Peace Hotel. Here, in the magnificent show kitchen, Chef Chan will present fun menus that combine his classical training with his love of fresh ingredients, Asian flavors, and modern twists.
Julien Laracine
Julien Laracine, is the director of food and beverages at Shook! Shanghai. Julien has been in the industry for more than 7 years. He learnt the trade quickly and rose to management level managing outlets for chain hotel Sofitel all over the world.

Well verse in English, French and Spanish, Julien travels as a hobby, learning different cultures and languages as he goes along. His experience with 30 over countries gives him the edge to understand the standards of F&B on an international level. He looks forward to ensuring the experience he brings translate to an experience you would not forget at Shook! Shanghai.
